In our travel report from Australia we've reached day six in the "2002 Off Centre Rally - The Big U", and then Ward Dossche has a tip to those of you that want to put faces to the names you see in various echoes, this in the article "Say 'Cheese'". Our kitchen this week picks up a really advanced dish, that needs lots of ingredients, but those of you who dare try it out, will probably find it worth while. "Xxcarol's Southern Chili" is the name of the dish. Finally some humour from Warren. A lawyer joke, as you might guess from the headline "Lawyers and Insurance Co's". ----------------------------------------------------------------- FIDONEWS 19-44 Page 3 4 Nov 2002 ================================================================= GENERAL ARTICLES ================================================================= 2002 Off Centre Rally - The Big U Submitted by David Drummond, 3:640/305 Day 6 - Friday 9th August (Boulia to The Dangie) More discussion on which road to take. Also, a policeman had called into the caravan park and notified us about a house which was being taken along the road to Dajarra and Urandangie this morning. Saw it cross the bridge outside the caravan park - 5 changes of gear just to reach the other side of the short bridge. How many gears do those trucks have? Just as we are about to leave, David informs me that most of our small group (including us) have decided to take the seal to Dajarra and go in the easy north road, just to keep me happy. Am amazed at the back down from the "doing it tough" psych, but am relieved at the reduced risk of bike damage. I don't have a macho image to live up to, so I don't mind being made the scape-goat for the change in plan. As it turned out, this was a wise choice anyway. Gabe came through the south road - half of which was fairly deep sand. All reports on the other roads were that they were a bit of a challenge. Some of the side-cars came up the river road, but had all sorts of trouble on the Donohue Highway, before they even got to the River Road turnoff, and eventually arrived at the Dangie Pub at about 7pm that evening. We got there around 1 o'clock in the afternoon, and laid out our swag under the one good shade tree. There are certain advantages to getting there early. Watched the house arrive on the back of the truck, in front of a huge cloud of dust. He had come in the south road, so we were happy not to have encountered him along our route. He only stopped for about 15 minutes, then headed off up the Camooweal road to Barkly Downs. Had a noisy, entertaining afternoon around the pub, dominated by Sally, a large friendly drunk Aboriginal woman who "Loved us all", "Loved America" and kept thanking us for coming to Urandangie. She also loved playing the same song at full volume on the juke box "Am I Pretty Enough". Her pet Galah kept David fascinated for some time. The campground next to the Pub wasn't as bad as I expected. There were a couple of flushing toilets in the pub, and two composting toilets on the other side. There were two showers - corrugated iron sides with a donkey boiler beside it. They got the fire going, then David and I had quite a nice shower together. There didn't seem to be any shortage of water. I guess they had a bore, but the water didn't smell very much. We had a can of stew, with a can of crisp vegetables in it, all on some re-headed vac- packed noodles. Quite tasty. Throughout the afternoon and evening, more bikes arrived, each with stories to tell. That evening, someone started a great fire in the large stone fire-pit. And then, when meeting the person in the flesh, quite often as well it seems we have been terribly mistaken in many of our assumptions. Right now I'm wondering where I put Yuri Safronov's photographs... ;-) Just visit this link: http://many-glacier.mine.nu/fidogallery/index.htm Enjoy yourselves, Ward Dossche 2:292/854 ----------------------------------------------------------------- FIDONEWS 19-44 Page 6 4 Nov 2002 ================================================================= FIDONET'S INTERNATIONAL KITCHEN ================================================================= Xxcarol's Southern Chili Yield: 10 Servings 3 lb Beef, inexpensive cut 'steak 1 sm Bag dry kidney or red beans 1 Fistful black eye peas (dry) 1 Fistful black beans (dry) 24 oz Contadina tomato sauce 24 oz Contadina stewed tomatos 2 c Water 2 c Rough chopped onions (2 lg) 2 Green peppers, chopped rough 1 Yellow summer squash 1 Green zucchini 1/2 c Califlower bits (stems too) 1 Fistful fresh green beans 3 tb Chili powder (or more) 1 tb Black pepper 1 ts Cumin or comino seeds 1 ts Hot sweet red pepper Ok, one of the hardest to type up, is my famous/infamous *Southern* chili. Fact is, I have never made it the same twice, and I've never really measured anything I put in it. I have attempted to list the most common forms, but any one item you see listed, other than the beef, beans, and tomato, and spices, is optional. It will *not* taste right without some of the optional stuff though. Feel free to add extra things not listed, such as I often toss in some fresh tomatos, a handful of cooked butter beans, worstershire sauce, olives, a radish or so, a bit of finely cooked pork (shred first). In fact, almost anything lands in there! Ok to start, this was designed for *long time* cooking over the stove in a cast iron 'big as they make'em' deep frypan. Its best made that way. Requires frequent addition of water as it cooks. Take the beef, inexpensive cut works as well or *better* in this dish. Should be the big 'chunks' probably with bone in, not overly marbled but with some fat about it. Now slice that to bite sized bits. You want something simular to a stroganoff beef strip. Cut across the grain so it cooks more tender. Chop all the veggies, but dont worry about making them very small choppings. 'Mincing' not required. I like to be able to tell what I am eating. Put the ingredients in, pretty much same order as listed. If you run out of space, stop. If you have more space, add optional things and more water. FIDONEWS 19-44 Page 7 4 Nov 2002 Now, cook (covered) on LOW for 12 hours at minimum. Tilt the lid if it is more than barely bubbling. From the kitchen of: xxcarol ----------------------------------------------------------------- FIDONEWS 19-44 Page 8 4 Nov 2002 ================================================================= CLEAN HUMOUR & JOKES ================================================================= Lawyers and Insurance Co's wdbonner@pacbell.net A NYC lawyer purchased a box of rare and expensive cigars, then insured them against fire, among other things. Within a month of having smoked his entire stockpile of these great cigars and without yet having paid even his first premium payment on the policy, the lawyer filed a claim against the insurance company. In his claim, the lawyer stated the cigars were lost "in a series of small fires." The insurance company refused to pay, citing the obvious reason: that the man had consumed the cigars in the normal fashion. The lawyer sued..... and won. In delivering the ruling the judge agreed with the insurance company that the claim was frivolous. The judge found, however, that the lawyer held a policy from the company in which it had warranted that the cigars were insurable and also guaranteed that it would insure them against fire, without defining what it considered to be unacceptable fire. Consequently, the insurance company was obligated to pay the claim. Rather than endure a lengthy and costly appeal process, the insurance company accepted the ruling and paid $15,000 to the lawyer for his loss of the rare cigars in the "fires". NOW FOR THE BEST PART.... After the lawyer cashed the check, the insurance company had him arrested on 24 counts of arson. With his own insurance claim and testimony used against him, the lawyer was convicted of intentionally burning his insured property and was sentenced to 24 months in jail and a $24,000 fine. This is a reportedly a true story and was the 1st place winner in the recent Criminal Lawyers Award Contest. I thought you may get a kick out of it.
